Rainbow Anniversary Cake

I was asked by a couple of friends to make a "Rainbow Cake" for their anniversary party. I was thrilled with the request, partially because Rainbow Cake is an unusual request, partially because I don't have enough excuses to make cakes!


The cake was decorated with Rum-Butter Buttercream and then covered with Marshmallow Fondant. The flowers are sugar paste. I was particularly proud of the flowers, and I did them free-hand, and without cutters! I need to invest in cutters, but have yet to.

I love the blossoms best. I will post up a tutorial later on how to make sugar blossoms without a cutter.

Just a note on the 'green' flowers. Originally they were supposed to be black. But, using WILTON Black colour gel was a bad idea. Black was not something it could be, the amount of gel I used should have turned the roses into the night sky, instead, Green‼ Not that it did not work with the cake, as it was green/blue.

But I was disappointed.

The couple loved them. :: shrug::

Have you tried tinting the fondant a dark color like blue, then letting it rest, then adding the black color? That usually works for me (unless I buy it because I'm lazy ;-)

Lovely cake. try to use americolor in black, I think that's the best.
